Pretty Egg-citing

A food we’ve long taken for granted is finally getting its moment in the spotlight, thanks to social media. While it’s easy to dwell on the downside (yes, eggs have gone from a budget-friendly protein to a luxury item practically overnight; ex: I saw a dozen for $12 at my local market!), let’s not get stuck on what we already know. Shoutout to Trader Joe’s for still keeping it somewhat reasonable. Instead, let’s shift our attention to the fun stuff: the innovative, surprising, and totally egg-citing trends taking over our feeds (and kitchens if you were able to finally do a recipe instead of just saving it cough cough me). Here are a few egg trends that took the internet through a storm. 

Drug Eggs

Despite the intimidating name, these eggs live up to their hype because once you try them, you NEED more. Inspired by the Korean dish Mayak Eggs, or 마약계란, these are marinated boiled eggs (preferably jammy) that pair perfectly with hot rice or toast. The recipe is simple, with soy sauce and sesame oil as the main ingredients. I make this dish at least once every couple of months because the combination of eggs and soy sauce is a comforting childhood favorite for me.

Cloud Eggs

These ethereal, baked creations are as simple as they are beautiful. The instructions? Whip up egg whites until stiff enough to flip on your head without falling (almost), then bake into fluffy clouds. Once baked, nestle the yolk in the center and add whatever flavor you crave like pesto, truffle, honey, or hot sauce. It’s a light, protein-packed snack that’s more about aesthetics than filling, but fun either way!

Pesto Eggs

This name is pretty straightforward because it is! Cook your eggs in a pan using pesto instead of butter or oil. The pesto infuses your eggs with rich flavors of basil, garlic, and cheese (basically a savory lover’s dream). Whether you like them sunny side up, scrambled, or as an omelet, this quick method makes for a delicious meal addition.

Chili Oil Egg Toast

Chili oil is a star in dim sum, noodle soups, and stir-fries so why not on toast? Add a savory kick to your everyday toast with a generous drizzle of chili oil crunch. It’s simple but insanely tasty. Just thinking about it is making me salivate.

6 Eggs 6 Ways: Started by @hipfoodiemom1 in a viral video, this trend has spread across TikTok and Instagram, showcasing creative takes on how to top three halved boiled eggs. From classic deviled egg flavors like bacon and mayo to bold spins like kimchi, PB&J, Caesar salad style, pizza, pickles, and even buldak ramen; the options are endless. What would you add to yours?
